Paleo Baked Chicken Thighs

YUM chicken! Here’s a super easy recipe for perfect chicken thighs.


Paleo Baked Chicken Thighs

Servings: 8     Prep time: 20 min     Cook time: 1 hr 15 min   Oven preheat: 365º


8 chicken thighs (with bones)

1 tablespoon rubbed sage (“powdered” sage)

1 tablespoon dried thyme

1 tablespoon dried oregano

1 tablespoon salt

2 tablespoons coconut oil (the high heat kind- at least 365º!)



  1. Preheat oven to 365º.
  2. Wash chicken thighs with cool water and pat dry with a paper towel (the dryer the better!)
  3. Sprinkle a pinch each of sage, thyme, oregano, and salt on each side of thighs and rub in. (Or mix all in a bowl and then rub onto thighs, it’s up to you!)
  4. Oil baking sheet with coconut oil and bake thighs for 1 hr 15 min.
  5. Check temp of chicken, should be at least 165º.
  6. Enjoy!
